To Make Pastry
Ingredients
2 Cups Flour
4 oz Butter
1/3 tsp Salt
1/2 Cup Ice Water
Method
Sift together 2 cups of Flour and salt
Then with finger tips pinch in butter until it resembles fine bread crumbs
Combine ice water slowly until dough is formed
Set aside in refrigerator for at least 30 minutes
Lightly dust a pastry board or counter top with flour and roll pastry out using a rolling pin
Use a pastry cutter or a teacup to cut circles in dough, roughly 3inches in diameter
Carefully lift each then pinch and fold edges to form a ridge to hold coconut filling
Place completed pastry shells on a baking tray. Use a fork to prick shell bottom 3-4 times
Pre-heat oven to 350ºF, place completed shells inside and bake for 15 mins or until lightly browned
To Make Coconut Filling
Ingredients
1 cup grated coconut *if using a fresh coconut, grate and squeeze with 1/4 cup warm water
2 cups Water
1 cup Brown Sugar
1 tsp nutmeg
1/8 or a Pinch of Salt
11/2 tbsp grated organic ginger
Method
In a medium sauce pan combine 2 cups water, salt, brown sugar and organic ginger Boil until liquid evaporates under medium heat
Remove tray from oven and use a spoon to fill each shell with coconut filling generously Return to the oven and bake until brown
Set aside tray to cool
Makes about 8 -10 servings
